Fluffy Golden Coin Pancakes


Ingredients:

3/4 cup of milk
2 tablespoons white vinegar
1 teaspoon vanilla
1 cup all purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons melted butter
6-7 drops yellow food coloring

1. Begin by adding the milk and vinegar to a large bowl. Stir an let stand for 5 mins to "sour". After 5 minutes stir in sugar, vanilla, egg and melted butter.

2. Add the flour, baking powder, baking soda, salt. Stir until all the lumps are gone. Add in your food coloring til you get your desired color.

3. Cook by 1/4 cup of batter at a time on a large skillet or griddle on medium heat until bubbles appear on surface, flip and cook til brown on the other side about 2 mins.

You cant really tell from the pictures how beautifully yellow or golden they are but trust me they look nice. You can garnish them with something green like kiwi, honeydew, or a mint leaf for that added St. Patricks Day touch.


This is a really nice fluffy pancake mix. I have tried quite a few because I love pancakes and this is a winner!



I am in desperate need of a new skillet. This one has seen better days!
